Easy High Protein Vegan Meals to Get back on Track |129g Protein, 1857 Calories (Simple & Realistic)



Easy High Protein vegan meals for fat loss, weight loss or muscle building. This is the way I’m planning on eating to get back on track after the holidays. I hope you’ll try some of the meals I shared here today.
Please note my total calories for this video includes my pre-breakfast snack and coffee.

Breakfast: Makes 1 serving
Calories 521, Protein: 34g, Carbs: 83g, Fat: 9g
45g dry brown rice cereal
70g shredded carrot
1.5 cup water
1 tsp cinnamon
1 pod of cardamom
Toppings:

5g chopped walnut
50g fresh blueberries
80g kiwi
13g powdered peanut butter

Lunch: Recipe makes 3 servings
Calories per 650g stir fry, 120g rice
Calories:544, Protein: 48g, Carbs: 58g, Fat: 14g
340g Fava bean tofu
300g extra firm tofu
1 medium size onion
2 red bell pepper
200g raw mushrooms
2 stalks of celery
2 large tomatoes
3 cups chopped bokchoy
2-3 tbsp low sodium tamari
1 tbsp minced garlic
1 tsp chili flakes
1/4 cup chopped green onions

Lasagna makes 8 servings
Calories per 400g serving:
Calories: 561, Protein: 36g, Carbs:62g, Fat:20g
9 whole grain lasagna noodles
3 zucchini
1 red bell pepper
4 cups of pasta sauce
Tofu Ricotta contains:
2 bricks of 349g extra firm tofu
30g kalamata olives
60g sundried tomatoes
30g nutritional yeast
juice of 1 lemon or use 1 tbsp white vinegar
2 -3 tbsp of water to help with blending
salt per taste
2-3 cloves of garlic
1-2 Thai green chilies or chili flakes per taste or omit
fresh chopped parsley for top (optional)
Toss all ricotta cheese ingredients in a blender and blend till smooth or has slight texture. Stop and scrape sides of the blender and continue to blend till everything is blended nicely. Ribbon Zucchinis with a peeler. Pre-heat oven to 400F. Add la thin layer of tomato sauce on a baking dish, spread as many zucchini ribbons/lasagna noodles as you like, add tofu ricotta, tomato sauce and repeat the process till all layers are complete. Add bit of ricotta and tomato sauce on top layer. Bake in the oven at 400F for 20-25 minutes. Feel free to turn oven to broil setting for the last 5 minutes to allow lasagna to brown on top. Remove from the oven, let cool. Cut into slices and enjoy. Refrigerate leftovers in the fridge once fully cooled.
