Instant Veggie and paneer loaded mini Uttapum for your busy days, a very quick recipe that comes together in less than 10 minutes and the flavours will blow your mind away. High in fibre,protein and fats,addition of seeds makes it extra rich in nutrients and adds healthy fats with minerals.

20g protein in two mini Uttapums,what else do you need !?

Recipe:
For batter take half cup Suji, 1/3rd cup curd,mix with a little bit of water and keep aside for 5 min till it absorbs all water.
Meanwhile chop your vegetables
I keep pre chopped vegetables like spinach,carrots.
Add 40g diced full fat paneer to ensure you get healthy fats and protein in the first meal of the day. Add 1/2 tsp pumpkin seeds,freshly grated coconut (optional),chopped onions and anything else that you find difficult in consuming could be any other seed or nuts. Add a generous amount of podi/gunpowder and mix everything nice with just a little bit of salt.
Next get back to the batter,add some water and give it a batter like consistency,add salt and 1/4th tsp baking powder,mix nicely and spread this over a heated tawa,top it up with the veggie paneer topping,cook from both sides and serve with chutney.
