I like to add pickled veg to tuna – along with whatever else; celery, mayo, mustard, salt/pepper…so good!
Those Spivey peaches would make a good crumble served with custard. The spice would be toned down.
Mx your cowboy candy into a block of cream cheese and serve with crackers – we like Club Crackers. My husband took my CC cream cheese dip to a work party and several asked for the recipe, one woman asked if she could take what was left home, lol
I’m thinking what you have there is “Fiery Peach Salsa” if so, it’s a Ball canning recipe and it’s my favorite, too.
Pickles are good in Macaroni salad and potato salad and in tuna or chicken salads. You could make Thai cucumber salad and can them.
I love how our snack sections look pretty much the same lol I love those little fruit strips from Aldi. They're so good and have surprisingly little sugar.
No hate at all i love her but for anyone reading this i would not go for raw milk pls don't -sincerely a person with microbiology degree
I also grow cucumbers and make WAY TOO MANY PICKLES! So I decided to take a few jars after a few months of sitting, chop them up, and freeze dried them! Made pickle powder for eggs, popcorn, potato salad, etc. Not forced to eat them and not thrown away!
This year I canned dry beans… pintos and black beans. I have always been satisfied with store bought canned beans. Not any more! There is no comparison. I made refried beans for tostados last night and the beans were fabulous. Not like the stiff, gummy canned refried beans. It's so nice to open a jar of beans throw in a few seasonings and they taste wonderful. I am 80 years old, I could kick myself for not doing this sooner. Too soon old, too late smart!

Hey, Kelsey. I am just to your pickle trauma part. I always feel that a pickle or a spoon of relish or such on the side of a plate can stretch a meal and dress up a plate to look like there's more than is actually on the plate. Doesn't matter what the meal is, just put a pickle on the plate.
diced pickles mixed with tuna for tuna sandwhich is yummy
Consider using the too spicy peaches in a gingerbread recipe
The cowboy candy brine would be good in the Mississippi pot roast recipe.

I, too, suffer from gardening FOMO. My pickle stash looks pretty much like yours, which is why I took note when another homesteading channel mentioned making dried pickle powder to season popcorn. I'll be cheering you on while trying to wrestle my own food storage down to size.
I Love Cheese and pickle waffles dipped in ranch. So on your waffle iron you just put a bunch of cheese and sliced pickles until it’s crispy and dip in ranch ❤
Add dill or sweet pickles to a hummus dip, amazing.
I have a wonderful pineapple stuffing that I make with the mock pineapple zucchini. If you’d be interested let me know. It is a family favorite.
