I MADE A EGGPLANT SANDWICH TONIGHT USING CHICKPEA FLOUR THAT I SEASONED THEN COATED IT WITH ITALIAN BREADCRUMBS AND BAKED IT AND IT WAS DELISH! GOT THE IDEA FROM ANOTHER YOUTUBER! I LOVE A GOOD VEGGIE ANYTHING❣😝😁🤗❣

That's the only way I ever knew to salt the eggplant! 🙂 The point of draining the liquid is to get the bitterness out and intensify the flavor. If you're watching salt, you can lightly rinse them, then pat them dry. This is classical method, so you're not taking a risk – though if you're frying you have to be more careful about drying them.

Just egg is awful it smells like sulfur. Why didn't you use aqua fava
Salting eggplant also removes some of that itchy tongue feel you can get from it.

Love your content! BUT the Dijon is NOT to make it creamy in the first place. It rather acts as an emulsifier combining oil and vinegar to a mass that's not separating itself. Furthermore this method is called Vinaigrette- the base of a standardized French salad dressing. Cheers
I added liquid smoke to the egg replacement then added dry rub and smoked paprika to the flower then added barbecue sauce pickle and coleslaw to the sandwich and made a pretty darn good barbecue sandwich with the eggplant recipe

Remove the eggplant and you've got something, just not a fan of the weird flavor. Almost like eating a flower.
