Apple Sweet Rice Cake 사과 찹쌀떡 만들기 Home grown Apples, non-dairy, gluten free, nut free
There is an apple tree in my yard. It bears a lot of apples every year. The apples are small but quite sweet. I made apple crisp, a loaf of apple bread, apple jam, juice, apple butter, and put it salads and even kimchi. Of course you can eat it by itself. I’ve been waiting to harvest apples this year too. This time I wanted to make apple rice cake. Finally I got some apples and made apple rice cake and shared with people. They said this rice cake is very good. It tastes close to apple pie with texture like Korean sweet rice cake.
Ingredients for 2 qt of glass baking pan (12 x 8 x 2 inch)
– For apple mix for top of the batter
* 12 small apples from my apple tree: Wash and slice them.
* 1/3 cup of coconut sugar for apple mix
* 1/4 cup of olive oil
* 1 tbsp of cinnamon powder
(You can add more if you like stronger cinnamon flavor)
– For the batter
* 1 box of sweet rice flour, 16 oz (454 g) (Mochiko sweet rice flour)
* 2 large eggs
* 1 cup of coconut sugar for the batter
* 1 tsp of kosher salt
* 1 tsp of vanilla extract
* 2 cups of soy milk
* 1/3 cup of olive oil
* 1 tsp of baking soda
