Cookies for my Santa Baby | Small Batch Baking
The holiday season is here, and I couldn’t be more thrilled to share a bit of our Christmas traditions with you all. This time of year fills our home with joy, from the nostalgic decorations to the simple act of baking cookies for loved ones. In this video, I take you through the making of one of our family’s favorites—coconut macaroons. These little treats are as easy as they are delicious, and they’ve become a special tradition for Todd and his dad. The recipe couldn’t be simpler, and that’s part of the charm. It’s a quick mix-and-bake affair that takes less than five minutes to put together.
Ingredients:
1 1/3 cups shredded coconut
2/3 cup sugar
2 tablespoons flour
2 egg whites, beaten
A pinch of salt
A splash of vanilla
Instructions:
Preheat your oven to 325°F (163°C).
In a bowl, combine the coconut, sugar, flour, salt, and vanilla.
Beat the egg whites until slightly frothy and stir them into the mixture.
Scoop onto a parchment-lined baking sheet and bake for about 20 minutes, or until golden brown on the edges.
As I mix and bake, I share a few stories about our decorations and the memories they carry—like the stockings from our childhoods and the hand-painted ornaments passed down through generations. My decorating style is much like my cookie plates: a little random, a lot sentimental, and always filled with love.
If you’re feeling adventurous, I’ve also experimented with variations like adding dried cherries to the mix or dipping the bottoms of the macaroons in chocolate. But honestly, nothing beats the classic version for me this year.
Thanks for spending a bit of your holiday season with me. Merry Christmas to you all, and be sure to check back tomorrow for Rachel’s fudge recipe and the grand finale—assembling our cookie plates. There’s nothing like sharing a bit of homemade sweetness this time of year.

Yes I am enjoying you Xmas series!!! Your the best!! Merry Christmas to you and your fam!!
Oh yes ma'am, I'm making these Monday evening. Thank you for sharing with us. Merry Christmas
Thank you ! Rachel 😊 I really enjoy your presentations. ❤ Susan
As much as I have always enjoyed your show, I do not like the “talking over” your videos. It seems contrived, not “randomly” speaking, which, in my opinion, makes most shows like yours. I started watching each of the cookie videos just to turn them off and watch one of the many other Christmas videos on YouTube. Merry Christmas!🎄
Happy holidays!!
My husband would love these.
Merry Christmas 🎄
Do you use sweetened or unsweetened coconut? These would be perfect for my dad this year!
Who's gonna eat those cookies for Santa. You or Todd? I wanna bet I wanna bet. Lol. You both wake up and the cookies are gone. Dogs are looking at you so sweet and helpless. Lol
Merry Christmas to you and your family God bless
Yummy Rachel those look soooo good.
Loving the videos, Rachael thank you❤
Merry Christmas ❤❤
Love this video Rachel❤ I decorate exactly the way you do, very eclectic, very sentimental, a conglomeration of fun & beautiful memories from over the years! That’s what Christmas is all about for me and my family. Thank you so much for welcoming us into your home and sharing your lovely traditions and delicious recipes!!! Blessings to you and those you love!❤❤❤
Eclectic pieces of love💞🌻🦋
I think I will try using cocoa instead of flour and dip them in chocolate! They look scrumptious!
I’m have really been enjoying these videos
What cookie scoop do you use? I bought the Wilson brand from Walmart and it stopped working after one tray of cookies.
Hey Rachel, I love your flour jars curious where you got them from?
Omg!! I just made these. They are so very easy and tasty! Thank you for sharing.
Hiii …. Merry Christmas…. Can I use desiccated coconut instead of shredded coconut .. thanks
Your tree is like my tree. Packed full of ornaments collected through our lifetimes, from milestones (wedding, Baby's first Christmas, etc.) to gifts from loved ones, to childhood movie characters, to ornaments representing our grown-up hobbies and interests. It is just color and fun and joy!!
I think i mentioned earlier my husband makes fudge final result. 27.5 lbs. I have made caramel popcorn, peanut butter blossoms and yesterday shortbread half chocolate dipped. Next up toffee and peppermint bark. Problem is im eating too much of it.
Yum❤
Merry Christmas to you both 🎄!!!
Rachel, I assume that since there is sugar in the recipe that the coconut is unsweetened. Am I right? Thankyou! Merry Christmas to you, Todd and family!
Thank you. MERRY CHRISTMAS!
My thought is if you are going to make a mess make a big mess and triple the full recipe Merry Christmas
Merry Christmas! 🎄
Merry Christmas! 🎄
I love seeing all your decorations and family treasures. I also love your recipes and will be baking for my family and neighbors.
This is just the recipe I need. I’m making a gingerbread using 4 yolks so now I have a way to use the whites.
Love your videos. Merry Christmas and Happy New Year to you two! Is it possible to link your jars you store your flour and sugar in?
Roll the dough into waxed paper and make frozen cookie dough. Pull it out and bake some in the morning with fresh coffee. Yum!
Blessings +++!!!
Yes, I love this series!💖
Rachel, your home and cookies are all just beautiful! Thanks again for sharing them with us. Merry Christmas to you and Todd!
Oh yum!! Do you use almond extract sometimes?
Merry Christmas, from our home to yours
Tod& Rachel
Mary Christmas to all
My mom has made that same crocheted stocking for all of us. I've had mine since 1977 (the name tag on it still has the date) and every time someone has joined the family via marriage or birth, my mom makes another one. I've never seen that stocking anywhere else!
Yum!!
