Hello everyone, today I will be sharing a very quick and simple trick to making your own phyllo/filo sheets at home. Filo is used in many recipes such as samosas, baklavas and Borek! Store bought filo won’t ever taste the same again after you try it at home!

Please ignore the mistake in the video! It is 250g, not 500g flour!

This recipe makes enough for 25 9 inch round sheets if filo!

Ingredients:
✨2 cups (250g) all-purpose flour, plus more for kneading
✨5 teaspoons olive oil
✨1/2 teaspoon fine salt
✨2 teaspoons white wine vinegar
✨3/4 cups warm water (about 110 F.)

For the starch mixture:
✨1/2 cup cornstarch
✨2 tablespoons all-purpose flour

  • The description in your title says 9%. The flour called for is two cups. That’s about 250g. The vinegar called for is 2teaspoons. That’s 10g. Vinegar weight equals 4% of the weight flour which is how bakers math calculates ingredient percentages.

  • This dough recipe has no yeast as ingredient. would you please tell me why the dough need to be rested for 1-2 hours. What's the reason behind it? Thanks!
