I love raw scallops but you should try it with a drizzle Kewpie mayo on top and torch it the top gets slightly charred and it adds an amazing smokey flavor
Check out Nova sushi up in Edgewater if you're in the area. They have live scallops prepared to order. Tremendously tender and tasty. Also just a fantastic spot overall!
Hi! A few hmart and some wholefoods locations in eastern Maryland rarely have sashimi grade yellowtail on hand. My local whole foods in montgomery county had hamachi/yellowtail and It was bomb but sadly they rarely have it though Wegmans has decent sized yellowtail sashimi filets If you can find it maybe you should try making Jalapeno Ponzu Yellowtaill crudo, it's pretty simple just cut the yellowtail fillet and marinate it and place some lime juice and jalapenos. Way more bang for your buck than a sushi place or seafood bar will charge you

Take a can of smoked oysters drain the juice fix one up like Florentine and try it in Rockefeller. Then try Spanish fusion and Asian fusion. On a budget and an off-season this is on point.
Why Asian scallops when you can get fresh Sea Scallops so near you? I get fresh MA Sea scallops at my local FL grocery store. The ones you had looked too circular, an indication they were NOT Sea scallops. Read up on that.

Hokkaido scallops are even better not marinated. Super buttery
I personally prefer scallops cooked. But there are a lot of mollusks that I prefer cooked over raw.

try them sliced up sitting in lime with purple onions sliced thinly and cilantro and a little tapatio sauce and some salt on a saltine cracker.
Try making a ceviche with scallops, I love scallops as a ceviche.
Vinegar and citrus do the same thing. They are both acid and cook the meat.
