Ingredients:
– 300g (3 cups) superfine almond flour
– 2g (½ tsp) baking soda
– 2g (½ tsp) salt
– 90g (¼ cup) pure honey
– 90g (6 tbsp) melted unsalted butter
– 1 tsp vanilla extract
– 3 almond slices per cookie (optional for decoration)

Instructions:
1. In a bowl, combine almond flour, baking soda, and salt.
2. Add honey, melted butter, and vanilla extract. Mix until fully combined.
3. Knead the dough with your hands until smooth.
4. Scoop 1 tbsp of dough, roll into a ball, and flatten slightly on a lined baking sheet.
5. Use your thumb to make an indentation in the center and add almond slices if desired.
6. Bake at 350°F (175°C) for 8-11 minutes or until edges are golden.
7. Let cool for 10 minutes before serving.

Tips:
– Substitute honey with a keto-friendly sweetener for a fully low-carb option.
– Store in an airtight container for up to a week.
