Ingredients: Vegan Stuffed Shells (serves 6)
30 jumbo shells pasta (about 200 g)
–For The Ricotta
350g extra firm tofu
3 tbsp nutritional yeast
3 tbsp lemon juice
¼ – ½ teaspoon sea salt (to taste)
⅛ tsp black pepper
½ tsp garlic powder (use fresh garlic if desired)
1 tbsp sage (chopped)
–For The Pumpkin Sauce
1 cup pumpkin puree (not pumpkin pie filling)
1 cup unsweetened plant milk
½ cup vegetable broth (homemade for extra savings)
1 tbsp nutritional yeast
3 tbsp maple syrup
½ tsp salt
1 ½ tsp pumpkin pie spice (or 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger)
¼ cup pecans, toasted
2 tbsp fresh sage

That's the sort of thing you'd only find in a high-end restaurrant, round my neck of the woods, this time of year! Although arguably without maple syrup… I wonder if that makes the difference? 😉

YOU are AMAZING – seriously, I am oil free and finding recipes that I really have fallen in love with can be hit or miss. Every single one I have tried has been wonderful and I love that I can leave out the oil if I want or use it for that special dish. Will try this one ASAP. CANNOT wait for Thursday. Am looking forward to the ginger energy balls. I find in the UK pumpkin just doesnt taste nice. And we dont have easy access to tinned either. Perhaps this would work with a tomato sauce?
