Vegetarian Mexican Burrito with 30g Protein 🌯
Vegetarian Mexican Burritos
Macros (1 burrito)

Ingredients:
-4 flour tortillas
-135g uncooked white rice
-120g black beans, drained
-200g @beyondmeat ground
-100g diced red onion
-1 tomato, diced
-chopped chives
-250g 1% cottage cheese
-30g nutritional yeast
-1/2 tsp salt
-1 tsp garlic powder
-3/4 tsp paprika
Directions:
-Cook rice, I used a rice cooker
-While that’s cooking, add cottage cheese, nutritional yeast, salt, garlic powder, and paprika to a blender and blend until smooth
-Cook onions on the stovetop on medium heat for 4-5 mins, then add the beyond ground and cook until browned
-Warm each tortilla in the microwave, then add the rice, beyond ground mixture, black beans, tomato, chives, then the cheese sauce
-Wrap tightly as shown (lmk if you guys want a step by step video for this haha), then repeat for the other 3 burritos
-Air fry at 400F for 4-5 mins (can also pan cook on low-medium heat for 3 mins on each side)
-Slice in half and enjoy! If freezing, you can reheat it by microwaving for 3-5 mins then air fry for 8 ish mins at 400F
