Craving the rich flavors of Jamaican Style stew peas but want to keep it plant based?
Try this simple Meatless Stew Peas recipe! Packed with creamy coconut milk, hearty veggie chunks, and red kidney beans, it’s a comforting dish bursting with Caribbean flavor. Perfect for a quick, healthy, and satisfying meal.
Ingredients
1 1/2 cups dried red kidney beans (or 2 cans, drained and rinsed)
6-8 cups water
1 cup veggie chunks (rehydrated or frozen) to rehydrate soak chunks in boiling hot water for 20 minutes or boil on the stove with 2 bouillon cubes for more flavor.
1 cup coconut milk
2 medium carrots (sliced)
2 stalks of scallion (chopped)
1 spring fresh thyme
2 cloves garlic (minced)
1 tsp of ginger powder or fresh ginger
1 medium onion (chopped)
1 bell peppers
1 scotch bonnet pepper (whole; optional, for flavor)
2 cups all-purpose flour (for spinners/dumplings)
1/2 tsp black pepper
1/2 tsp ground pimento
1/2 tsp smoked paprika
1/4 tsp all-purpose seasoning
Instructions
Prepare the Beans:
If your using dried kidney beans, soak them overnight. ( for less cooking time) Drain, then boil in 6 cups of water until tender (about 1-1.5 hours). Keep the water for the stew. If using canned beans, rinse and set aside.
Prepare the Veggie Chunks:
If using dry veggie chunks, rehydrate them by soaking in hot water for 10-15 minutes. Drain and set aside.
Make the Spinners (Dumplings):
Mix 2 cups of flour with 1/2 tsp salt and enough water to form a firm dough. Pinch off small pieces and roll them into thin cylindrical shapes. Set aside.
Heat a pot over medium heat and add a little oil. Sauté onions, garlic, ginger, bell peppers and scallion . Add thyme, paprika, allspice, and black pepper, stirring well.
Combine Ingredients:
Add the cooked beans (with their water) or canned beans with 6-8 cups of water. Bring to a boil. Add the coconut milk, carrots, potatoes, veggie chunks, and whole scotch bonnet pepper (for flavor, do not pierce). If you want it really spicy then go ahead and pierce pepper.🥵
Dumplings Spinners:
Drop the spinners dumplings into the boiling pot. Stir gently to avoid breaking the dumplings or bursting the pepper.
Reduce the heat to low and let the stew simmer for 20-30 minutes, or until the carrots and potatoes are tender and the sauce is thickened. Adjust seasoning with salt and all-purpose seasoning if needed.
Remove the scotch bonnet pepper before serving. Enjoy with steamed rice, ground provisions, buns etc.
