Pumpkin Ravioli! A Great Fall Side Dish: Noreen’s Kitchen
Greetings! As you may know, Autumn is my favorite time of year. What better way to celebrate the season than with a great side dish to go along with our cinnamon chicken? Pumpkin Ravioli fits that bill!
You may think that sounds a bit odd, but I can assure you that this ravioli is super delicious and really easy to make! Starting with some simple ingredients that include pumpkin, Ricotta cheese and won ton wrappers you can make this in less than an hour! I have made a sage infused brown butter to top the ravioli with and then add some grated fresh Parmesan cheese and lots of cracked black pepper an you are on your way to pumpkin heaven!
This dish is most likely made from ingredients you may already have on hand aside from the won ton wraps. Those are easy to find in the produce section of your market. You can make larger raviolos by using the egg roll wrappers. You don’t have to make them like I did using two wrappers. You can simply fold them into triangles or you can cut them with a round cutter. You do it the way you like.
Don’t think this is only an idea for pumpkin ravioli! You can make traditional cheese ravioli or meat ravioli or spinach ravioli. The possibilities are endless! After all, won ton wrappers are just pasta. Look at the ingredients, water, flour and maybe a bit of salt.

Noreen make your own ricotta – so easy. Just bring a quart of whole milk to a scald, stir in 1/4 cup lemon juice or vinegar and add 1 or 2 tsp salt. The curds will separate from the whey. Stir gently for 5 minutes with heat off. Drain whey off. Chill cheese and add a little cream. So much cheaper than store bought ricotta. Use the whey for bread or add whey to the dogs food.
lol rick… busted! i have been wanting to do these for so long, but never have… i'll bet a sweet version deep fried would be nice too… 😉 looks sooooo good!

I use the rice wraps or rice papers they use to make spring rolls with, it works for me a little more delicate.
That looks so delicious. I wish I could find some gluten-free wonton wrappers 🙁
