Gluten Free Flour Blend Recipe ~ Noreen’s Kitchen
Greetings! I have recently started baking gluten free bread for a local shop due to overwhelming demand. While I do not subscribe to a gluten free diet, I have done my research and completely understand what it is and what needs must be met in order to achieve a great tasting gluten free baked good. Before you say something I would also like you to know that I have separate pans that are used for the gluten free baking so I do not cross contaminate the gluten free products by baking them in my personal baking pans.
This gluten free flour blend is an all purpose flour blend that can be used for breads, pancakes, waffles, muffins, or even as a breading for meats and fish.
I hope you give this a try if gluten free eating has been a challenge for you. I also hope you love this blend and find it easy to use in your favorite recipes.

I mill my own flour and have a lot of sorghum grain. Is there a difference between sorghum flour ground from sorghum grain and sweet white sorghum flour?

I am new to G/F only since Dec 1st 2015, again like the lady in your local store this is for health reasons (It was interesting to know after her stroke that she changed her eating habits) I would be interested as my mum has just had 2 strokes (I think it is her food and she needs to go G/F as well, but as she is more mature getting her to change for her health is difficult as she thought eating wholemeal everything was healthy)
Anyway returning to your flour blends, I cannot get anywhere where I live either Potato Starch/Flour or Tapioca/Starch/Flour.
These are the flours I can purchase and the ones I make: Store Millet/Sorghum/Cornflour White Rice Flour (it does not say sweet or plain just Rice flour) I make at home Garbanzo/Chickpea, Almond, and Coconut flour, I do have Xanthan Gum, so for me I would really appreciate what to do to get a good All purpose flour mix so I do not have to keep so many bags open, I would like to mix then keep in one container and so maybe I could use for (bread, biscuits, cakes etc)

Hi Noreen! I love all of your breads, rolls and pizza dough's..i've never succeeded in any other recipes! Just wondering if this flour blend can be substituted in your pizza dough?? its my favorite!! Thanks from Australia!
Instead of Mochi flour, can I use brown rice flour instead?
I'm completely gluten free. I've cut out refined sugars as well. I'm not a fan of Tapioca Flour, BUT, I will have to try this! 🙂

Thank you! I just tested positive for Celiac disease & was told to start eating gluten free. I would prefer to make breads at home so they are fresher.
Do I need to store this mix in the fridge if I make a double or triple batch? Thanks 🙂
I made this mix by measuring on a scale because each cup of flour has a different density. I used a bread machine to make a 2 pound white honey loaf . I followed the bread machine instructions, placing the wet ingredients at the bottom. It did not rise. I realized that when baking bread, gluten free flour mixes do not require a second rise. Do you have any suggestions?

Thank you so much. There is an all purpose flour blend on the market but it uses garbanzo bean flour and that's all I taste and I'm not a big fan of garbanzo beans. I can't wait to get some of the sweet rice flour as I have everything else on hand. Thank you!!

I. Love. You! I'm supposed to be eating gluten & dairy free (but I cheat ALL the time). Let's face it GF foods taste yuck compared to the real thing. But if you say this recipe is delicious I trust you. Everything you make is gold!
I'll never stop making your dishes that contain wheat & dairy because my husband & I LOVE them. But it's nice to have GF options so I can keep to my diet 80% of the time. Can't wait for the bread recipe. So excited!!!

Just an admonishment to be very careful and have your children and Rick to be very careful as well. Cross contamination is so easy. Bowls, Utensils, Countertops that are not spotless, oven drips, etc. There are varying degrees of gluten sensitivity. What is "acceptable" to some is not good at all for others. You may want to seek a lawyer so you can word your labels properly protecting yourself from legal action.
