Raw Strawberry Chia Refrigerator Jam Recipe! Noreen’s Kitchen
Greetings! My friend Bev, themrsvolfie here on YouTube, sent me this recipe that she found on Facebook. It is for the most interesting raw refrigerator jam that has no sugar and no pectin. It has fresh fruit, honey and is thickened with Chia seeds!
This is super easy and really delicious. You will want to make this a day ahead and then you can use it as you would regular jam.
We made a peanut butter sandwich with it and Rick ate it for breakfast and he said it was delicious. I enjoyed this as well. This is a really great option if you are not a canner, but want to make yourself some fresh jam.
This contains Chia seeds and if you are not familiar with Chia beyond the infamous Chia Pet, then I highly recommend that you do a bit of research on the benefits of Chia seeds. They are very easy to incorporate into your diet by throwing them into your yogurt, smoothies or juice and they have amazing health benefits. They were a favorite of the ancient Aztecs and they are derived from certain strains of the salvia plant.

What makes the Chia Seed the super food that many claim it to be?
30% of the chia seed’s oil is Omega 3 oil. 40% of its oil is Omega 6 oil. This provides the nice balance those who take supplemental Essential Fatty Acids are looking for. The chia seed’s substantially dense percentage in alpha-linolenic fatty acid also makes this seed a healthy dietary source of fatty acids.
You do not need to grind the Chia Seeds to digest it. It is a relatively easy to digest seed, whereas flax seeds are not. Often, one has to grind flax seeds to be able to process them in their digestive system. That is not the case with chia seeds.
The chia seeds are great for athletes because they are highly hydrophilic. Being hydrophilic means it absorbs large amounts of water. Chia Seeds can absorb over 10 times their weight in water making them a great enhancer in hydrating our bodies. They absorb the water we drink holding it in our system longer.
Studies show that eating chia seed slows down how fast our bodies convert carbohydrate calories into simple sugars. This leads scientists to believe that the chia seed may have great benefits for diabetics.
The chia seed gels when becoming wet and this gel, when in our digestive systems, helps prevent some of the food, hence calories that we eat from getting absorbed into our system. This blockage of calorie absorption makes the chia seed a great diet helper. Eating the seeds also helps dieters by making them feel fuller faster so they will be less hungry!
Chia seeds provide antioxidant activity
Chia is a great addition to a detoxification program. Chia seeds are high in fiber and in healthy oils making them an excellent addition to many detox programs.
Mix Chia seeds into yogurt, sprinkle them on cereal in the morning, add to salads, or even add them to your baking. There are many ways to add chia seeds into your daily routine!

i can not get rhubarb can i leave it out or is there a substitute for it.

I am not a nutritionist. I don't do calorie content etc. If you wish to know those things, then you can simply type the ingredients into any myriad of calorie calculators available on the internet and find that information out for yourself. Then you could compare it to one of your preferred jams. It lasts up to a month in the fridge.
Hi I loved it your recipe I will definitely try, but for how long it lasts and what about calories. do u happen to know how many less calories it has from regular jams? Thanks Samantha
chia seeds have been a favorite of mine for about 2 years now. i add them to my fresh fruit smoothies, and have been making chocolate chia pudding. its awesome n healthy. try it with strawberries n blueberries . also peach jam is good too, but use the white chia seeds instead of the black, it looks much better . flax seed acts the same as chia but takes a lil longer to thicken !!! try the flax seed also………ty Noreen

Another thing with Chia? You MUST drink ALOT of water if you eat more than, say, a few tablespoons at a time.. It will Constipate, and dehydrate you! AS it PULLS that water out of your Intestinal tract. So, Be careful! Just F Y I
Chia absorbs like three times it's weight in water, this is why it is a great diet supplement.. Get Organic, and get RAW if you can find those. I have sprouted many chia ( well, they just thicken, you can't see the sprouts), I sprout Kamut, Spelt, Rye, and I rarely do wheat. I Make a good sprouted bread with these grains!!
Chia is great as a FILLING agent ( to decrease appetites), and I put in Smoothies and make it with RAW salad dressings and dips..
Technically it isn't sugar free due to the honey. Maybe stevia may work for truly sugar free?
