PS: We used the term “vegetarian chili” since that’s what most people search for when looking for a bean/no-meat chili, but rest assured, this recipe (like all my recipes) is also vegan!
I made this recipe pretty half assed in the cooking world- meaning I didn’t make my own chili spice but still added most of the ingredients as called for and adjusted according to what I had available. I just poured everything in and I’m about to let it start the one hour and a half simmer BUT it is already amazing. Thank you for this recipe already, even though I haven’t even sat down to eat it yet. I got my potato roasting in the oven and I can’t wait for dinner!

Just made this chili today. A few changes needed as I didn’t have everything but it still came out better than any chili I’ve made.
Didn’t have wine so used some pomegranate syrup diluted in 1/2 C water instead. Also used homegrown Sella peppers instead of jalapeño. Used some fine grain polenta instead of masa harissa. Used smoked chili powder instead of making my own. Will try making my own soon though. So delicious with cashew sour cream.
You know what else deglazes? Coffee.
I’m sure this Chili tastes very good because of the time and effort put into it. Is there a misprint of “vegetarian” chili? I watched the entire video and did not see any ingredient that would be considered vegetarian. I am pleased that it appears to be vegan.

Thank you so much for this Nisha! This is the best chilli of my life, I've made it twice now, and made the chilli powder from scratch too using your recipe and the different Tajin chillis. I modified it a little using baby tomatoes and added sweet potato cubes also and different beans due to availability. It's just amazing thank you so much for inspiring me to make this. Both my grandmas, my mother and all my aunts would love you! Because you just made MOLE, ….you added beans to it, but that's ok…I love you for that, because they would have added chicken instead, because it's the traditional Mexican wedding dish❤
Stop adding loud tones, it ruins the video and adds no value. It's a very lazy way of presenting, people expect better quality videos.
What can be used instead of red wine?
This is a superb recipe. My brother makes a great beef chili and this veggie version is practically indistinguishable from it. I used beer in mine and it worked well. I used shop-bought chipotle chilli powder (1 tablespoon) and 1 tablespoon of ancho chilli flakes, then added some more chilli powder later when seasoning to taste. I also added some standard corn flour to thicken, because that's all I could get hold of. It worked fine. This recipe's a keeper.
Wow, just made this and it is awesome. (I didn't have the Mexican corn flour so used oats in the spice blender). What a super flavour.

I made really boring chili bean soup yesterday. I have nothing against boring meals, truly, once in a while it's totally fine! But, I just heard that my partner is joining for dinner and decided that this "chili" will not do. I'll try to use some of your tips to improve it a little bit and give it some oomph.

Great recipe! I omitted the wine, didn't have any. I enjoyed the depth of flavors, especially adding the maple syrup! My Tex-Mex father-in-law had a very similar recipe. Some of us Mexicans use those dehydrated peppers to make a red sauce for enchiladas, tamales, and other delicious foods. We rehydrate with hot water, blend, strain, & add similar spices. You're the best, keep those delicious recipes coming! Muchas gracias!

A big pot of chili is in my families monthly rotation. We usually eat a vegetarian meal 3 nights a week, we started out with 1 vege-night a week but with the wonderful recipes I've discovered our vege-night is growing. This Vegetarian chili recipe is the bomb!, it's so good, I'ts a little time consuming but it is worth it, and you're right it tasted even better the next day. My families favorite chili toppings are corn-chips, diced green onions, and grated cheese, and sour cream. I'm a new fan Rainbow Plan Life, I can't wait to try my next meal.

I cant drink wine or alcohol, are there any substitutes?
try and use black coffee instead of red wine. ads a little bit of that bitterness but not as harsh as if ud use a beer.

Just made this, absolutely the best chili I’ve ever had in my life. I wish I would’ve added more peppers. I seen all of the comments about how spicy it was. I guess I do not have baby mouth lol. If you’re looking for a confirmation, this is it! And make you own chili powder I feel like that took it to the next level .
