Ingredients:
For Eggplant:
âą 4 large eggplants
âą 6 garlic cloves (insert 2 per eggplant)
âą 4 green chilies (insert 1 per eggplant)
âą Oil for brushing
Bharta:
âą 2 tbsp oil
âą 1 tbsp cumin seeds
âą 3 medium red onions, diced
âą 4 garlic cloves, chopped
âą 1 inch ginger paste
âą 2 green chilies, chopped
âą 1/2 tsp turmeric powder
âą 1 tsp red chili powder
âą 1 tsp coriander powder
âą 5 small or 3 large grilled tomatoes
âą Salt to taste
Method:
1ïžâŁ Roast Eggplant & Tomatoes
âą Make deep slits in the eggplants and insert garlic & green chili. Brush with oil and roast directly over flame until charred and tender.
âą Grill tomatoes until blistered. Peel and finely chop both.
2ïžâŁ Prepare Bharta Base
⹠Heat oil, add cumin seeds till they sizzle. Sauté onions until golden, then add garlic, ginger, and chilies.
3ïžâŁ Spice It Up
âą Mix in turmeric, red chili, coriander powder, and salt. Add chopped tomatoes, cook till oil releases.
4ïžâŁ Combine & Simmer
âą Add chopped eggplant, mix, and simmer with 1/2 cup water. Cook until flavors meld.
5ïžâŁ Serve
âą Garnish with coriander and enjoy with roti or rice!
