Ingredients:

For Eggplant:
‱ 4 large eggplants
‱ 6 garlic cloves (insert 2 per eggplant)
‱ 4 green chilies (insert 1 per eggplant)
‱ Oil for brushing
Bharta:
‱ 2 tbsp oil
‱ 1 tbsp cumin seeds
‱ 3 medium red onions, diced
‱ 4 garlic cloves, chopped
‱ 1 inch ginger paste
‱ 2 green chilies, chopped
‱ 1/2 tsp turmeric powder
‱ 1 tsp red chili powder
‱ 1 tsp coriander powder
‱ 5 small or 3 large grilled tomatoes
‱ Salt to taste

Method:
1ïžâƒŁ Roast Eggplant & Tomatoes
‱ Make deep slits in the eggplants and insert garlic & green chili. Brush with oil and roast directly over flame until charred and tender.
‱ Grill tomatoes until blistered. Peel and finely chop both.

2ïžâƒŁ Prepare Bharta Base
‱ Heat oil, add cumin seeds till they sizzle. SautĂ© onions until golden, then add garlic, ginger, and chilies.

3ïžâƒŁ Spice It Up
‱ Mix in turmeric, red chili, coriander powder, and salt. Add chopped tomatoes, cook till oil releases.

4ïžâƒŁ Combine & Simmer
‱ Add chopped eggplant, mix, and simmer with 1/2 cup water. Cook until flavors meld.

5ïžâƒŁ Serve
‱ Garnish with coriander and enjoy with roti or rice!
