That been liquid is called aquafaba (No, it isn't just from chickpeas), which holds a lot of nutrition. Save it aside and add it back in place of water or stock. Why waste it? You didn't need the egg either.
Traders Joe carry the spicy Indian burger patties. They offer a different flavor from the black bean patties….I like both
Egg means its not a true veggie burger
Those are fried onions, not caramelized. Delicious but please learn the difference. Caramelized onions will take at least 45 minutes.
I do this kind of cooking a lot, and my general advice is: use tapioca-starch instead of flour, it will become a much more "cheesy" kind of crust. This gives what I name the "chicken mcnuggets" mouthfeel. Also: Experiment not only with mushrooms and beans, but also do beans and quinoa, beans and tofu, mushrooms and tofu and so on, this all makes nice patties which you can also eat in wraps, burritos, as a side to salads and potatoes and what not. This kind of "mix-fiber-starch-and-protein-into-a-patty" is very versatile and Tapioca starch gives nice chewy crusts. Pro-Tip: get some methylcellulose. I know it sounds disgusting, but it is really nothing more than harmless fiber with a weird name. It will make binding anything together much easier, you can skip the egg, and the flour and the three-times-mixing, and maybe grinding some parmesan, and then the ratios are not right, ah its a nightmare. Just add a spoon of MC, knead for a moment, if it feels sticky, it is sticky and will withstand any cooking in the pan, not fall apart, it just works. I cannot overestimate enough how much my cooking went easier, when I researched on MC, found that it was harmless, and it has become a staple in my kitchen ever since. So, next tip: Fry on low heat, but longer. It will not stick, it will not burn, it will just develop a nice crust on the outside. If you do it too long, well it gets a little darker but it takes a looong time from right to burnt piece of coal, which has ruined many dishes when I was using higher heat (I was doing some cutting while waiting, and forgot about my sizzling pan). Maillard reactions start at 130C (which you easily reach with low heat, as you dont have to heat a whole bucket of oil like in deep frying), so your crust quickly evaporates water, and than faces the oil dry, ie. the full oil temperature. And this rises quite high even on low heat. And at 180 degree or so, stuff gets bad real quickly, so just have it "in the safe zone" at a low heat. Just plan on cutting stuff like salad, tomatoes and what not while waiting for the patties.
Last tip: use some soy-sauce/msg and nurtitional yeast. It makes a much richer and satisfying. You get a satisfying, chewy, crusty piece of goodness. It does not taste like meat, but it tickles all the buttons that meat does.
Yes, thats about it, you will have many nice meals that dont take forever to make in the future, making these kind of patties has become a weekday-thing for me since you can make it really fast. Especially the MC thing gets me rid of having to do the egg-cleaning, the many jars of flour and starch and oats and what not, oh boy it is so much faster making this kind of stuff with MC. And its vegan, btw.

I’ll be honest; the best burger I’ve ever had in my life is a black bean burger. Local farmer sells them at the market and they’re phenomenal. Still trying to work out the recipe, he won’t share, but this was really close.
Made these for my wife last night. Used a variety pack of fresh mushrooms instead of one type. Fried them about halfway in a cast iron and then onto the charcoal grill for a quick finish.

If you make this same recipe without too much oil, egg, crumbs still can make same or better. Just my personal opinion.

Yeah to Sam! Use to love watching you cook, then 6 yrs ago went vegan. I still make your white bean chili except instead of chicken I use soy curls. Delighted to find your take on a bean burger. Damn it looks !

I recently went pescetarian and have been looking for a good quality veggie burger that doesn't break the bank (its insane how much they charge for premade processed vegetables with a bunch of additives).
This looks like an incredible recipe and I'm going to try it for sure.
With the associated environmental costs (including the amount of fresh water required to raise a single cow to maturity for slaughter) in addition to the animal rights issues some people have, I can definitely see the advantages to trying to make a quality "beef substitute" veggie burger.
