Winter mai healthy soup with noodles
This noodle 🍜 in veggie broth is both healthy and tasty and with the onset of winters, it is perfect for dinner. Recipe is as follows.
Part 1: Broth
Add chopped ginger in a lightly oiled saucepan. Saute for a minute and then add chopped green chilies and lemongrass. You can skip lemongrass if you don’t have it. Then add chopped vegetables of choice. Here, I’m using carrot, celery and onion but feel free to use any vegetable that is available to you. Once you get a good char on vegetables, add some water and blend it using emulsion blender . You can also blend it in food processor/blender. After that strain it in same saucepan.
Part2: Seasoning
Once the broth comes to a boil, add salt, pepper, soy sauce, vinegar and cumin powder as per taste. You can add additional seasoning of choice such as garlic powder, peri peri powder and anything else you like. Once seasoned as per your liking, add boiled noodles to a bowl and top it up with prepared broth and spring onion/cilantro.
