đ° Ingredients:
For the Coconut base:
Desiccated coconut 100g (1 cup)
Hot Water 1/3 cup (80ml)
For the Caramel syrup:
Sugar 100g (œ cup)
Water 60ml (Œ cup)
Fruit base:
Dates (pitted and chopped) 150g (about 1 cup)
Dried Sultana, Raisins, Cranberries mix 250g (1 Œ cups)
Cashew nuts 50g (â
cup)
Ginger freshly grated 1 tablespoon
Lemon zest 1 teaspoon
Brandy 1-2 tablespoons (optional)
Cinnamon powder (OR allspice powder) 1 teaspoon
Golden syrup or Honey 3 tablespoons
Vanilla Extract 1 teaspoon
Almond essence œ teaspoon
Finally,
2 Eggs
Melted Butter 75g (1/3 cup)
Plain flour 100g (â
cup)
Baking powder 1 teaspoon
Baking soda Œ teaspoon
Measuring cup size – 240ml
Baking pan 21x11x6 cm
Bake in a preheated Oven at 170c (338f) for 50-60 minutes. Cover the top with a foil paper halfway through baking.

Thanks so much. A lovely recipe and easy enough, I think, for a novice like me. But, just a question here: can I omit the brandy as I am allergic to alcohol? Will it make the cake too dry? Can I substitute anything else for the brandy?
