Skirlie Roast Potatoes
🏴 SKIRLIE ROAST POTATOES 🏴
When I was growing up we would often have oatmeal and butter on our boiled potatoes. Particularly on new seasons Ayrshires, if you are Scottish you will know how good they are!!!
So it just made sense to do a roasted potato version of this memory! Who doesn’t love a roast potato!!! Don’t worry if you are vegetarian or vegan as you can easily sub the beef dripping for any oil you like, so you don’t have to miss out on this taste sensation!!!
Serves 4
1kg bag of baby potatoes
30g oatmeal
3 springs rosemary
1-2 cloves of garlic
Zest of 1 lemon
40ml beef dripping
Olive oil
Flakey salt
Get the potatoes into cold water with salt and bring to the boil. Cook till very tender, drain and let them steam for 5 minutes before placing them all on an oven tray and crushing with a potato masher. Sprinkle with flakey salt and olive oil and get into the oven at 180c till golden and crispy.
While they are cooking make the skirlie. Finely chop rosemary, zest a lemon and crush your garlic and add to a bowl with 30g of oatmeal, a pinch of salt and the melted beef dripping. Mix well to combine then leave to set till potatoes are ready.
Into a bowl, tear your potatoes in half by hand, crumble in your skirlie with a drizzle of olive oil, mix thoroughly ensuring the potatoes are well coated in oatmeal.
Roast again till they are lovely and crispy all over. Serve with your roast dinner or just have them as a crispy delicious snack to eat with your martini 🍸 happy days 👏🏼👏🏼👏🏼
