One pan vegetarian Gnocchi
One-pan vegetarian Gnocchi with @callmekristatorres

INGREDIENTS:
3 TBSP olive oil
1 finely diced onion
20 ounces potato gnocchi
1 1/4 cup cherry tomatoes, diced
2 TBSP tomato paste
1/3 cup heavy cream
4 garlic cloves, minced
1/2 tsp crushed red pepper flakes
2-4 burrata cheese balls (cashew cheese can be substituted for vegan)
Fresh basil as desired
salt + pepper
RECIPE
Heat up your large skillet or Goodful deep cooker, pour in olive oil and swirl until it coats the bottom of the pan. Add in diced onions and garlic. Saute on medium heat until caramelized. In a separate pot, bring water to a boil and add in gnocchi. While the gnocchi is cooking, add cherry tomatoes, tomato paste, heavy cream, red pepper, salt, and pepper to the onions and garlic. Let them cook, occasionally stirring, for about 10-15 minutes or until the tomatoes are soft. When the gnocchi is done, drain it and add it the rest of the ingredients in the skillet. Complete the recipe by adding the burrata cheese and fresh basil. Enjoy!
