If you want to impress your guests at your next dinner, make this. It looks fancy and festive , and yet it only takes a short time to prepare. If you are having a lot of guests you can split the eggplants and roast up a bunch of them . The dressing recipe below is enough for about 2 medium eggplants
🌱Eggplant with Tahini & Pomegranate seeds🌱

INGREDIENTS:
TAHINI DRESSING:
½ cup tahini
Juice of 1 lemon
2 garlic cloves , grated
1/2 teaspoon salt
1/4 to 1/2 cup of water to thin sauce
Add All ingredients, except for the water to a small bowl. Whisk together (it will be very thick, gradually add the water and whisk until the mixture lightens in color and thins out
FOR THE EGGPLANT:
1 large eggplant, sliced into 1/4 inch rounds
Cooking oil spray
1/4 cup of water
Toppings:
1 dollop of unsweetened non dairy yogurt
1/2 lemon juiced
2 tablespoons pine nuts (lightly pan toasted)
1/4 cup pomegranate seeds
Bunch fresh mint and parsley, chopped
Wash the eggplant and slice it into 1/4 inch rounds . Heat a large frying pan over medium high heat . Spritz each side of the eggplant slices with a little oil. Add the slices to a pan and cook on each side for about 2-3 minutes. Add the water to the pan and cover it. Let it cook covered for about 2-3 minutes until the eggplant softens. Remove the cover and let the eggplant cook for another 1 to 2 minutes until golden
Add the eggplant to a dish , top with the tahini, yogurt and other toppings
