This recipe is not only great for the gut (due to it being gluten free and contains bone broth) it is also high in protein and great as the weather is getting colder aka sick season!
Ingredients: – one whole cooked rotisserie chicken, shredded (I like to get mine at Whole Foods because they don’t use added hormones, antibiotics, etc. in their chicken) – 1 1/2 (32 oz) cartons of organic chicken bone broth – 3-4 celery stalks, chopped – 4-5 carrots, sliced into coins – 1 medium onion, chopped – 2-3 garlic cloves, chopped – 1 tbsp of olive oil – 2 tsp of parsley – 1 bay leaf – 1 tsp of thyme – 1 tsp of black pepper – Gluten free noodles of choice (I used @jovialfoods Mafalda noodles)
Directions: – Shred rotisserie chicken – Chop vegetables (carrots, celery, onion, and garlic) – Heat olive oil over medium heat in a large pot – Add vegetables to pot and stir until slightly tender – Add in bone broth and seasons. Stir. – Allow soup to come to low boil (until carrots are fully softened) – Add chicken and noodles – Stir softly until noodles are fully cooked – Serve!
