It’s here! Air fried & dehydrated viral seed crackers
You asked for air fryer and dehydrated methods for my viral seed crackers so here they are! These gluten-free and oil-free seed crackers are perfectly crunchy and so simple to make!
Gluten-Free Seed Crackers (makes 60-65 crackers)
½ cup ground flaxseed (or flaxseed meal)
¼ cup chia seeds
¼ cup hemp hearts (sub with more sesame seeds if needed)
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup sesame seeds
½ cup gluten-free certified quick oats (or almond flour)
2 tsp dried oregano
1 tsp ground cumin
½ tsp garlic powder
½ tsp salt
1 ¼ cup filtered water
Dehydrated Method:
Prepare the baking tray with parchment paper (not wax paper!).
Mix all of the dry ingredients in a large bowl.
Add water, stir, and let sit 10 min until the water is absorbed.
Spread the seed mixture thinly and evenly over the parchment paper.
Dehydrate at 140 F for 1 hour.
Score them into the size of crackers you want and return to the dehydrator for another hour at 140 F.
Peel the crackers away from the parchment paper and flip them over so the bottoms dry out. Return to the dehydrator for one more hour at 140 F.
*To dehydrate at 120 F increase the time by 30 minutes or more as needed.
Air Fryer Baked Method:
Follow the steps above for preparing the cracker mixture.
Bake (on parchment paper) at 300 F for 15 minutes.
Score the crackers and return to the unit for another 15 minutes at 300 F.

I'm concerned about what the dehydrating/baking in the oven will do to those CHIA SEEDS. The reason we soak the chia seeds in water is for it to expand and have those gelatinous coating- that's the fiber itself. Now, if you do EVERYTHING to remove the water (hence, removing that jelly-like coating again) then I'm worried it's either;
a.) risk constipation if you fail to drink enough water to rehydrate the chia seeds consumed from these crackers
b.) the dehydration/baking rendered the chia seeds to be unable to rehydrate- which removes the risk of constipation BUT in turn sacrifice the fiber you could've gotten from it
I would have a hard time not eating it all at once! The texture looks perfect!
