Hello everyone. This is a simple meal that I made for dinner last Sunday. Don’t let how it looks fool you, it was absolutely delicious. 😋 I love this recipe because it is full of vegetables and quinoa is low fat and full of protein. I also whipped together a sauce made with pesto, lemon juice, dried spices, and a little mayo and sour cream. Absolutey divine ✨
