The problem of pressure marking can be resolved with advancing 3 of the 4 defenders and leaving only one to worry about the offside line.

The reason why Brighton can't do what Liverpool does and have a spare CB to press the ball carrier is because they don't have the same quality of CBs as Liverpool. The club is currently going through a CB crisis as it's really hard to find proper ball carrying and pressing CB, they tried to buy Olivier Boscagli this transfer window but failed to.

In my opinion your solution to force Brighton out wide is problematic because of their fullbacks. For example Estupinan and Kadioglu are the type of fullbacks who want the ball played to their feet and have the technical ability to either carry the ball forwards or to find progressive passes
It’s a very similar issue to what teams face when playing against Liverpool. Overload the center and suddenly you have Trent with time and space trying to find a way through.

How to win Brighton ?
Playing against Brighton without Van Hecke, you don't need any tactics. Just park the bus, put your striker beside Dunk/Webster. Be patient, and I guarantee you will get 1v1 moment with the GK at least 4-5 times per game
