Recipe for easy homemade plant balls
2 cans of cooked lentils, chickpeas, black beans, or other legumes (around 530g drained)
1 onion
Handful of fresh parsley (around 15g)
2 cloves of garlic
75g oat flour
4 tbsp nutritional yeast
2 tsp oregano
2 tbsp soy sauce
Salt and pepper to taste
Drizzle of oil for air frying
Instructions:
1. Combine all ingredients in a food processor and blend until well mixed.
2. Shape the mixture into balls.
3. Lightly drizzle the balls with oil.
4. Air fry at 200°C for 10-12 minutes, or until golden brown and crispy on the sides.
5. Serve with anything you like. I like to serve this with some roasted veggies, flatbread or bulgur for a Greek-style dish.
6. Keep in the fridge or freezer for your next meal.
