Pumpkin 🤝 chocolate marble muffins (gluten free, refined sugar free, dairy free) 🍂🎃
Recipe:
1 1/2 cups 1:1 GF flour, I use Bob’s or King Arthur
1 tsp baking soda
1 Tbsp pumpkin pie spice (or 1 1/4 tsp cinnamon, 3/4 tsp nutmeg, 1/2 tsp allspice, 1/2 tsp ground ginger)
1/2 tsp cinnamon
1/2 tsp sea salt
1/4 cup coconut oil, melted and cooled (sub for DF butter)
1 cup pure pumpkin purée
3/4 cup coconut sugar, or granulated sugar
1/4 cup pure maple syrup
2 eggs, room temp!
1/4 cup milk of choice
1 tsp vanilla extract
1/4 cup cacao powder
1. Preheat oven to 350F and line a muffin tin with wrappers, or spray tin with cooking spray. To prevent muffins from sticking to the wrappers, can also lightly spray them beforehand.
2. Mix together flour, baking soda, pumpkin spice, cinnamon, sea salt until combined.
2. Make sure all your wet ingredients are at room temp so the coconut oil doesn’t clump!!
3. In another bowl, whisk together coconut sugar, maple syrup and room temp eggs. Then mix in pumpkin purée, vanilla and room temp milk. Finally mix in melted coconut oil. Now mix the dry ingredients in until no lumps remain.
4. Divide the batter in half. Add in the cacao powder to one half. If the batter seems dry, mix in 1-2 Tbsp of milk to thin it a bit.
5. Scoop batter into muffin liners, alternating pumpkin and chocolate. Repeat until all batter is used. Gently swirl once with a knife. Option to top with choc chips.
5. Bake 20-25 minutes until tops slightly brown and bounce back when pressed.
6. Serve warm with your fave butter!
